Loads of Raspberry puree went into this, a sort of souped up version of the Raspberry Tart Berliner Weisse we did a couple of years back, with a bit more alcohol to balance that citric sharpness of the fruit, and a lovely deep draw of yoghurt-like intrigue from the lactobacillus culture we kettle soured with, and a little bit of biscuity sweetness from Munich and Vienna malts. It’s summer, it’s pink and It’s Giving… Raspberry!
